Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shank
Provides the meat and gelatin-rich liquid that gives the soup its body and flavour.
Sweet milk
Adds creaminess and mild sweetness to the broth.
Rich cream
Adds fat, richness and a smooth, velvety texture.
Eggs
Thicken the soup gently and add body when stirred in beaten.

The step that matters

Stir in the beaten eggs before serving. Eggs thicken by gentle heat. If the soup is kept at a hard boil after they go in, they can curdle and turn grainy, so add them off the boil and stir steadily.
