Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Long simmering breaks down connective tissue and bone, giving the soup body and rich flavor.
Onions
Softened during simmering, they add sweetness and aromatic depth to the broth.
Flour
Browned in butter and stirred in, it thickens the soup and adds a toasted, nutty flavor.
Hard-boiled eggs
Sliced and added at the end, they contribute richness and a mild, creamy texture.

The step that matters

Browning the flour in butter. Flour browns quickly once it starts to colour and can turn bitter if overcooked. Stirring constantly until it reaches a light brown keeps the flavour nutty and lets it thicken the soup evenly when added.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, sugar, flour, butter, egg):
