Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whitefish
Forms the main body of the dish, cooking to a tender, flaky texture inside the stuffing.
Stale bread
Soaked and squeezed, it absorbs liquid and gives the stuffing a soft, moist body.
Butter
Adds richness and fat, helping the fish brown and giving the stuffing a smooth texture.
Egg yolks
Bind the stuffing together and help it set gently when heated.

The step that matters

Stir in the yolks off the heat. Egg yolks begin to set when heated, so adding them to a very hot mixture can scramble them. Removing the pan from the heat first lets them bind the stuffing smoothly.

Swap the sage

How well each one fits the dish's main ingredients (whitefish, bread, onion, butter, pepper, egg):

  1. Parsleyfits better
  2. Garlicfits better
  3. Thymefits better
  4. Sagethe original

Fit is the average pairing score against whitefish, bread, onion, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
