Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. Heat the milk and half of the butter in a saucepan.

  2. Mix the flour with a little water until smooth.

  3. Stir the flour mixture into the milk.

  4. Cook until thick, stirring to prevent burning.

  5. Once cooled, stir in the beaten eggs.

Assemble and bake

  1. In a baking dish, layer the mixture and salmon alternately.

  2. Sprinkle rolled crackers on top.

  3. Moisten the crackers with milk.

  4. Dot the crackers with the remaining butter.

  5. Bake at 400°F (200°C) for about 20 minutes.

  6. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the sauce and help it set firm when baked.
Flour
Thickens the milk into a smooth, stable sauce.
Milk
Forms the liquid base of the sauce and keeps the dish moist.
Butter
Adds richness and flavor, and helps the crackers brown.
Salmon
Provides the main body and flavor of the dish.

The step that matters

Cook the sauce until thick. Flour must be cooked long enough to thicken fully and lose its raw taste; stirring constantly prevents scorching on the bottom of the pan. Eggs should be added only after the mixture cools slightly so they do not scramble.
