Baked Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dress the chicken and soak it in cold salt water for 30 minutes.

  2. Place the chicken in a baking pan and stuff it.

  3. Sprinkle the chicken generously with salt and pepper.

  4. Lay a few slices of fat pork on top to keep it moist.

  5. Cover the pan and bake until the chicken is tender at 350°F (175°C).

  6. Baste the chicken often and turn it for even cooking.
