Directions

The book says “a rather hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  2. Butter a flat cake tin.

Make the loaf

  1. Combine the veal, salt pork, cracker crumbs, 2 beaten eggs, and 1 cup of stock in a large bowl.

  2. Mix the mixture well with your hands.

  3. Form the mixture into a loaf.

  4. Place the loaf in the tin.

Glaze and bake

  1. Beat the third egg.

  2. Spread the beaten egg over the loaf.

  3. Sprinkle with dried bread crumbs.

  4. Bake for 3 hours.

  5. Baste frequently with the remaining stock mixed with melted butter.

What each ingredient does

Veal
Forms the body of the loaf and gives it its main meaty structure.
Eggs
Bind the mixture and set as it bakes, holding the loaf together.
Salt pork
Adds fat that keeps the lean veal from drying out during cooking.
Cracker crumbs
Absorb liquid and help the meat hold together in a tender loaf.
Stock
Adds moisture to the mixture and to the basting liquid.
Butter
Adds richness and fat to the basting liquid, helping the surface brown.

The step that matters

Baste frequently during the 3-hour bake. A dense loaf of lean meat dries out over a long bake. Repeated basting with stock and melted butter adds moisture and fat to the surface, keeping it juicy.

Swap the thyme

How well each one fits the dish's main ingredients (veal, pork, egg, bread, marjoram, summer savory, pepper):

  1. Sagefits about as well

  3. Parsleyfits less well
  4. Nutmegfits less well

Fit is the average pairing score against veal, pork, egg, bread, marjoram, summer savory, pepper. Candidates are from the same food group and used in at least 100 recipes.
