Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the stale loaf of bread into slices ¼ inch thick.

  2. Divide these slices into pieces 2 inches long and 1 inch wide.

  3. Fry the pieces in hot butter or oil until golden brown.

  4. Spread a thin layer of mustard on each piece.

  5. Top with cheese and place in a 400°F (200°C) oven until the cheese is melted.

  6. Serve hot.
