Columbus Eggs

Ingredients

Directions

  1. Peel the shells from the hard-boiled eggs and cut each egg in half.

  2. Trim a small piece from one end of each half so they can stand upright.

  3. Pulverize the yolks and mix with the minced meat.

  4. Moisten the mixture with butter or vinegar and season with salt, pepper, and mustard.

  5. Fill the egg whites with the mixture, pressing the halves together.

  6. Place the filled eggs on a platter to resemble whole eggs.

  7. For extra filling, add vinegar to the remaining mixture and pour it over the eggs.
