Custard Tartlets

Custard Tartlets

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Line patty pans with a good crust.

  2. Prepare a custard and flavor it to your liking.

  3. Fill the pans three-quarters full with custard.

  4. Bake the tartlets in a gentle oven at 300°F (150°C) for about 15 minutes.

  5. Remove from the oven and let cool.

  6. Spread a little sugar icing over each tartlet.

  7. Sprinkle a little more sugar on top.

  8. Return to the oven and bake until the icing is crisp.
