What each ingredient does

Flour
Forms the dough's structure, holding the apple inside while it boils.
Lard
Adds fat that tenderises the dough and keeps it short.
Baking soda
Reacts with the cream of tartar to produce gas that lightens the dough.
Cream of tartar
Acidifies the dough so baking soda can react and leaven it.
Sour apples
Provide tart flavour and moisture that softens as the dumpling cooks.
Crab-apple jelly
Adds sweetness and tart fruit flavour inside the apple core.

The step that matters

Tie the cloth tightly after dipping it in hot water and flouring it. A hot, floured cloth keeps the dough from sticking and forms a skin as it boils. A loose or dry cloth lets water soak in, making the dumpling soggy or causing it to break apart.

Swap the apple

How well each one fits the dish's main ingredients (flour, cream, milk, sugar, butter, crab):

  1. Vanillafits better
  2. Raisinfits better
  3. Coconutfits about as well
  4. Applethe original
