Almond Nougat

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. In a copper bowl, mix powdered sugar and egg whites, whipping over a clear fire until thick like batter.

  2. Add chopped almonds, candied orange peel, vanilla sugar, and strawberry juice. Mix well.

Layer and bake

  1. Spread the mixture on two pieces of wafer paper, about 1 inch thick.

  2. Cover with two more pieces of wafer paper and place a flat tin with a small weight on top to keep level.

  3. Bake in a 350°F (175°C) oven for a few minutes until nearly dry.

Shape and serve

  1. Cut into oblong squares or shape into baskets while still warm.

What each ingredient does

Powdered sugar
Sweetens the mixture and, with the whipped egg whites, forms the body of the nougat.
Egg whites
Whipped with sugar to create a light, airy structure that holds the mixture together.
Blanched almonds
Provide bulk and a crunchy texture throughout the nougat.
Candied orange peel
Adds chewy texture and a sweet citrus flavour.

The step that matters

Whipping the egg whites and sugar until thick. Egg whites must be whipped to a stable, thick foam to trap air and give the nougat its light structure. If under-whipped, the mixture stays loose and will not set properly when baked.
