Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Adds richness and emulsifies the milk, giving the drink a smooth, creamy body.
Egg white
Whipped to stiff peaks, it adds a light, airy foam that lifts the texture.
Milk
Forms the liquid base, adding moisture and creaminess to the drink.
Sugar
Sweetens the base and helps stabilise the beaten yolk.

The step that matters

Folding in the beaten egg white. Stiff egg white foam holds air only if it is folded gently. Stirring or mixing it hard deflates the foam, so the eggnog loses its light texture and separates.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk, rum, brandy):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, sugar, milk, rum, brandy. Candidates are from the same food group and used in at least 100 recipes.
