Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped to stiff peaks, it adds a light, airy foam that lightens the texture of the ice.
Jamaica rum
Alcohol stays unfrozen, so it keeps the punch softer and adds its own aroma.
Lemons
Their juice supplies the acidity and bright flavour that define the punch.
Sugar
Sweetens the lemon juice and balances its acidity.

The step that matters

Combine the whipped egg white with the frozen lemon mixture. The mixture must be frozen but still spoonable, so the whipped egg white folds in without deflating. If it is frozen solid, the foam cannot blend and the texture turns icy and dense.
