To Preserve Berries Whole
Ingredients
Directions
Prepare
Pick out and wash the fruit, then fill glass jars about three‑quarters full.
Make a syrup by boiling 1 pound of sugar with 1 cup of water for 15 minutes.
Pour the syrup over the berries in the jars, filling them to the top.
Process and seal
Place the jars in a boiler with cold water and straw or excelsior at the bottom.
Boil the water until the fruit is scalding hot, adding more syrup as needed.
Remove the jars and seal them tightly.

What each ingredient does
- Fruit
- Provides the main body and flavor of the preserve, kept whole in the jar.
- Granulated sugar
- Forms the syrup that sweetens the fruit and helps preserve its shape and texture.
The step that matters
Boil the water until the fruit is scalding hot. The fruit must reach scalding heat throughout so that it is properly heated before the jars are sealed. Adding syrup as needed keeps the berries covered, so they stay submerged and do not dry out or discolor at the surface.
