White Bechanel Sauce

Ingredients

Directions

Make the stock

  1. In a stew-pan, combine the white stock, onion, mushrooms, thyme, parsley, mace, and salt.

  2. Boil until the stock is reduced by half and has extracted the flavors of the herbs, then strain.

Thicken and finish

  1. In a clean stew-pan, add the thick cream and gradually mix in the reduced stock while stirring continuously over low heat until thickened.

  2. If using thin cream, mix the arrowroot smoothly into it and let simmer for five minutes before adding to the stock.

What each ingredient does

White stock
Forms the liquid base, and reducing it concentrates its flavor before it is combined with the cream.
Thick cream
Provides fat and body, giving the sauce its rich texture and smooth mouthfeel.
Arrowroot
Starch that thickens the cream when thin cream is used, so it sets without relying on fat.

The step that matters

Thicken over low heat while stirring. Gentle heat and constant stirring let the cream and reduced stock combine evenly and thicken smoothly; high heat or neglect can scorch the milk solids or cause curdling and lumps.

Swap the mace
