What each ingredient does

Green tomatoes
Form the bulk of the pickle, softening into a chunky, jam-like texture as they cook.
Coarse sea salt
Draws water out of the tomatoes over 24 hours, firming them and concentrating the pickle.
Vinegar
Provides the acidity that preserves and sharpens the pickle while it simmers.
White mustard seed
Adds sharp, pungent flavour that mellows during cooking.
Onions
Contribute sweetness and body as they cook down into the thickened mixture.

The step that matters

Cooking until thickened, stirring. Thick sugars and solids in the pickle can scorch on the bottom of the pot. Frequent stirring with a wooden spoon keeps heat even and prevents burning while the liquid reduces.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (tomato, pepper, allspice, mustard, vinegar):

  1. Capsicumbetter flavor fit
  2. Horseradishbetter flavor fit
  3. Cucumberbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, pepper, allspice, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
