Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften and sweeten the base, adding body and flavour as they cook down in butter.
Potatoes
Break down during stewing to thicken the soup and give it a smooth, full body.
Butter
Carries the frying of the vegetables and adds richness and a rounded flavour.
Carrots
Add natural sweetness and colour, and contribute body as they soften.
Turnips
Add a mild, slightly peppery flavour and help thicken the stewed base.

The step that matters

Stew gently for 4 hours. A gentle simmer lets the vegetables break down slowly and release flavour without scorching on the bottom of the pot. A hard boil can burn the base and make the soup taste bitter.
