Stuffed Cabbage Head

Ingredients

Directions

Prepare the leaves

  1. Separate the leaves of the cabbages and boil them in salted water until half done. Drain well.

  2. Lay a clean, large napkin in a colander and place the largest leaves overlapping at the bottom.

Assemble the filling

  1. Chop the small leaves of the cabbage finely and mix with the chopped meat, bread crumbs, eggs, butter, cream, pepper, salt, and allspice.

  2. Spread a thick layer of the meat mixture over the cabbage leaves in the colander, then cover with another layer of boiled cabbage leaves. Repeat until all ingredients are used.

  3. Gather the corners of the napkin and secure with string, allowing room for swelling while retaining shape.

Boil and serve

  1. Boil in plenty of water for 2 to 3 hours.

  2. Serve whole, garnished with parsley, or slice when served cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Leaves wrap the filling and hold its shape while it cooks.
Chopped meat
Forms the savoury body of the filling and sets as it cooks.
Eggs
Bind the filling so it holds together when sliced.
Bread crumbs
Absorb moisture and help the filling stay tender and cohesive.
Cream
Adds moisture and richness, keeping the meat filling tender.

The step that matters

Securing the napkin. Gathering and tying the napkin must leave room for the filling to swell as it cooks; too tight a bundle can burst or squeeze out the filling, while too loose a bundle loses its shape.

Swap the cabbage

How well each one fits the dish's main ingredients (meat, bread, egg, butter, cream, pepper, allspice):
