Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give it a soft, tender interior.
Egg yolks
Bind the potato mixture so the croquettes hold their shape.
Coconut oil
Adds fat for richness and moisture, and fries the outside to a golden brown.
Beaten eggs
Act as a binder so the bread crumbs adhere to the coating.
Bread crumbs
Form a crisp, golden browned crust when fried.

The step that matters

Rub the mixture through a sieve. Pressing the potatoes through a sieve breaks up lumps and makes the mixture smooth, so the cylinders hold together and fry evenly without cracking.

Swap the white pepper
