What each ingredient does
- Cracked wheat
- Provides the body of the porridge; its starch swells and thickens as it cooks in water.
The step that matters
Cook for 3 hours without stirring. Gentle, indirect heat from a farina boiler or double kettle lets the grains swell and soften without scorching on the bottom. Stirring can break the grains and make the texture gluey.
