Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the broth

  1. If using fresh oysters, shuck them and reserve the liquor.

  2. In a pot, combine the oyster liquor with water and bring to a simmer.

Cook and serve

  1. Add the oysters and cook until they curl, about 2-3 minutes.

  2. Brown the beef suet in a separate pan.

  3. Add diced steak to the pan and cook until browned.

  4. Combine the steak with the oyster mixture and simmer for 10 minutes.

  5. Season to taste and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main briny flavour and tender texture when cooked briefly.
Rump steak
Browned pieces add savoury, meaty flavour and body to the soup.
Beef suet
Rendered fat carries flavour and helps brown the diced steak.

The step that matters

Add the oysters and watch the timing. Oysters firm and curl within minutes. Overcooking squeezes out moisture and makes the proteins tough and rubbery, so cook only until they curl.

Swap the brussels sprouts

How well each one fits the dish's main ingredients (oyster, beef, apple, potato, watercress):

  1. Horseradishfits better
  2. Chivefits better
  3. Shallotfits better
  4. Brussels sproutsthe original

Fit is the average pairing score against oyster, beef, apple, potato, watercress. Candidates are from the same food group and used in at least 100 recipes.
