Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tail
Releases gelatin and meat flavor into the stock during long, gentle stewing.
Onion
Adds savory sweetness and aroma as it softens and flavors the stock.
Carrot
Contributes natural sweetness and body to the stock during simmering.
Turnip
Adds earthy flavor and body to the stock during simmering.

The step that matters

Skim the surface after the stock comes to a boil. Proteins and fat rise to the surface as the liquid heats. Skimming them removes cloudiness and greasiness, leaving a clearer, cleaner-tasting soup.
