Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Pancakes
Ingredients
Directions
Make the batter
In a bowl, mix flour, milk, eggs, sugar, and salt until the batter is light and smooth.
Let the batter rest for a few hours if possible.
Cook the pancakes
Heat a frying pan and melt a little dripping or butter.
Pour enough batter to barely cover the bottom of the pan.
Cook over medium heat, loosening the edges occasionally.
Check if the underside is browned, then flip the pancake to brown the other side.
Remove the pancake and place it on kitchen paper to absorb excess grease.
Keep pancakes warm on a hot dish until ready to serve.
Serve
Sprinkle sugar and squeeze lemon juice over the pancake before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- All-purpose flour
- Provides the starch and gluten network that gives the pancakes their body.
- Eggs
- Bind the batter and add structure and richness as they set during cooking.
- Milk
- Hydrates the flour and adds moisture and tenderness to the batter.
- Sugar
- Adds sweetness and helps the surface brown evenly in the pan.
The step that matters
Cook over medium heat and wait for browning before flipping. Medium heat lets the centre set before the outside colours. Flipping too early tears the pancake, while too much heat scorches the surface before the inside cooks through.
