Calf's Head with Brain Sauce

Ingredients

Directions

Prepare the head and tongue

  1. Boil the calf's head in water, skimming the surface carefully.

  2. Simmer for 2.5 to 3 hours until done.

  3. Boil the tongue with the head for 45 minutes before the head is done.

  4. Remove the skin and fibers from the brains, drain the water, and place them in a saucepan with 1 tablespoon of vinegar and water. Skim the liquid and boil for 15 minutes.

  5. Trim and skin the tongue when cooked.

Make the brain sauce

  1. Chop the brains coarsely and add them to a saucepan with melted butter, chopped parsley, sage, pepper, salt, and lemon juice. Simmer gently for a few minutes.

Serve

  1. Place the skinned tongue in the center of a hot dish, pour the brain sauce around it, and serve.

  2. Serve the calf's head on a separate dish, garnished with cut lemon and parsley or boiled broccoli.

  3. Send parsley sauce to the table in a tureen, and serve with ham, bacon, or pickled pork.

What each ingredient does

Calf's head
Forms the main body of the dish, cooked long and slowly until tender.
Brains (in the method)
Are chopped and simmered to form the soft, rich body of the sauce.
Melted butter
Adds fat and richness, giving the brain sauce a smooth, silky texture.
Tongue
Cooked alongside the head, then skinned and served as the centerpiece.
Lemon juice
Adds acidity that brightens the rich butter and brain sauce.

The step that matters

Skimming the head while it boils. Foam and impurities rising to the surface can cloud the broth and taint the flavor of the head. Skimming carefully keeps the cooking liquid clean and the meat tasting fresh.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (butter, parsley, pepper, lemon, broccoli, sauce, ham):

  1. Thymefits better
  2. Tarragonfits better
  3. Capersfits better
  4. Sagethe original

Fit is the average pairing score against butter, parsley, pepper, lemon, broccoli, sauce, ham. Candidates are from the same food group and used in at least 100 recipes.
