Cauliflower Au Gratin

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the cauliflower

  1. Preheat the oven to 350°F (175°C).

  2. Remove the leaves from the cauliflower.

  3. Boil the cauliflower in salted water until tender.

Make the cheese sauce

  1. In a saucepan, melt the butter.

  2. Stir in the flour. Cook the mixture for 1 minute.

  3. Gradually add the milk. Stir until the sauce thickens.

  4. Add salt, pepper, and half of the cheese to the sauce.

Bake and serve

  1. Place the cooked cauliflower in a baking dish.

  2. Pour the cheese sauce over the cauliflower.

  3. Sprinkle breadcrumbs and remaining cheese on top.

  4. Bake for 20-25 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the gratin and becomes tender when boiled.
Milk
Liquid that, heated with flour and butter, forms the sauce.
Butter
Fat that carries flavour and helps form the roux with the flour.
All-purpose flour
Thickens the milk into a smooth sauce when cooked with butter.
Grated cheese
Adds rich flavour and creates a melting, stretchy texture in the sauce and topping.

The step that matters

Cook the flour in the butter before adding the milk. Cooking the butter and flour together for a minute forms a roux, which removes the raw starchy taste and helps the sauce thicken smoothly without lumps when the milk is added gradually.
