What each ingredient does

Chocolate
Provides the main flavour and, once melted into the milk, the dense body of the pudding.
Egg whites
Whipped to a froth, they trap air that lightens the pudding as it steams.
Egg yolks
Add richness and help bind the chocolate mixture as it sets.
Butter
Adds fat for a smooth, rich texture and helps keep the pudding moist.
Powdered rusks
Form a dry crumb coating on the mold so the pudding releases cleanly and has a light crumb edge.

The step that matters

Folding the frothy egg whites. Whites must be folded gently, not stirred, and added just before steaming. Overmixing deflates the foam, so the pudding loses the air that lightens its texture.
