Rabbit Pie

Ingredients

Directions

  1. Cut the rabbit into small pieces, removing the breast bone and boning the legs.

  2. Cut the veal into thin 2-inch square pieces and the bacon into strips.

  3. Scald and scrape the bacon rind, then place it in a saucepan with the rabbit bones and breast.

  4. Cover with cold water, add salt, pepper, onion, and mace, then simmer gently for gravy.

  5. Layer the veal, rabbit, and bacon in a pie dish, seasoning each layer with pepper, salt, nutmeg, and lemon rind.

  6. Pour in half a pint of the stock, then line the edges with pastry.
