Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release gelatin and flavour into the water during long, gentle simmering.
Carrots
Add natural sweetness and aromatic depth to the broth.
Onion
Contributes savoury sweetness and aroma as it cooks slowly in the stock.
Liebig's extract of meat
Adds concentrated meaty savour and depth to the finished broth.

The step that matters

Simmer gently and skim. A rolling boil emulsifies fat and fine particles into the liquid, making the broth cloudy and greasy. Gentle heat and regular skimming keep it clear and clean-tasting.
