Oyster Soup

Ingredients

Directions

Make the stock

  1. In a pot, combine the stock, onion, salt, and peppercorns. Boil until reduced.

  2. Skim and strain the mixture. Return 1 quart to the pot with the bay leaf and oyster liquor.

Thicken and finish

  1. Stir in flour mixed with water to form a smooth paste. Bring to a boil.

  2. Add the boiled cream and anchovy essence. Stir well.

  3. If using fresh oysters, add their liquor to the stock, remove gills, and simmer to extract flavor.

Serve

  1. Heat a metal strainer in the boiling stock, add oysters for 3 seconds, then transfer to a soup tureen.

  2. Pour the soup over the oysters and serve hot.

What each ingredient does

Flour
Thickens the soup into a smooth, body-rich liquid when mixed with water and boiled.
Cream
Adds richness and a smooth, mellow texture to the finished soup.
Oyster liquor
Supplies the concentrated briny, savory flavor that defines the soup.
Cod or mutton stock
Forms the liquid base that carries all the other flavors.
Anchovy essence
Adds a deep savory, salty note that enhances the seafood flavor.

The step that matters

Heating the oysters in the strainer. Oysters overcook quickly and turn tough and rubbery. A brief 3-second dip in the boiling stock is enough to warm them through while keeping them tender.
