What each ingredient does

Oatmeal
Forms the thick body of the porridge as its starch swells and gelatinises in hot water.

The step that matters

Cover tightly and turn off the stove. A tight lid keeps steam and heat in, so the oatmeal cooks slowly and gently in the residual heat overnight. Losing heat or steam can leave it undercooked or dry.
