Scalloped Mutton

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Cut the cold cooked mutton into thin pieces or cubes, removing all bone, fat, and gristle.

  2. Season the fine bread crumbs with coarse sea salt and black pepper, and place them in the bottom of a shallow baking dish.

Assemble and bake

  1. Layer the mutton over the bread crumbs, followed by the boiled macaroni, and then add the tomato sauce.

  2. Pour the melted butter over the remaining fine bread crumbs and spread them on top.

  3. Bake for about 20 minutes at 350°F (175°C).
