What each ingredient does

Cold mutton
Forms the main body of the dish, carrying the sauce and coating.
Egg yolk
Enriches the sauce and helps it bind and thicken as it blends in.
Flour
Thickens the onion and water mixture into a smooth sauce.
Egg
Acts as a binder so the breadcrumbs adhere and form a crisp coating.
Butter
Softens the onion and adds richness and flavour to the sauce.

The step that matters

Fry in hot oil until golden brown. Oil that is not hot enough lets the coating soak up grease and turn soggy before it browns. Hot oil sets the egg and breadcrumb crust quickly, keeping the coating crisp and the meat inside tender.
