Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the sauce as it cooks with the butter and stock.
Butter
Carries the flavour of the onion and carrot and adds richness.
Stock
Forms the liquid base that the flour thickens into sauce.
Onion
Adds savoury sweetness and aroma as it browns in the butter.
Carrot
Adds subtle sweetness and body to the sauce base.

The step that matters

Adding the stock slowly while stirring. Adding hot stock gradually and stirring keeps the flour dispersed so lumps do not form. Beating the mixture after half the stock is in smooths the starch into an even sauce.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (flour, butter, pepper, lemon, carrot):

  1. Parsnipbetter flavor fit
  2. Leekbetter flavor fit
  3. Shallotbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against flour, butter, pepper, lemon, carrot. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
