Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken
Forms the bulk of the filling and gives the croquettes their main flavor.
Thick cream sauce
Binds the chopped chicken together and keeps the filling moist.
Egg
Coats the croquettes so the bread crumbs adhere and form a crisp crust.
Bread crumbs
Form a crisp, golden outer crust when fried.

The step that matters

Cooling the mixture before shaping. The cream sauce must set and firm up as it cools; shaping a warm filling makes it soft and sticky, so the croquettes can break or lose their shape in the hot oil.

Swap the mace

How well each one fits the dish's main ingredients (chicken, cream, sauce, nutmeg, pepper, bread, egg):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, cream, sauce, nutmeg, pepper, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
