Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream sauce
Binds the mixture into a soft, shapeable mass and keeps the filling moist.
Warm boiled rice
Adds body to the filling so the croquettes hold their shape.
Sweetbread
Provides the main meaty filling and rich flavour.
Mushrooms
Adds moisture and earthy flavour to the filling.
Beaten egg (in the method)
Coats the croquettes so the breadcrumbs stick and brown evenly.

The step that matters

Set aside to cool before shaping. A warm, soft mixture is too loose to hold its shape. Chilling firms the binding starch and cream sauce so the croquettes keep their form in hot oil.
