Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the tapioca

  1. Soak the tapioca in the cold water for 5 hours.

  2. Scald the milk.

  3. Add the soaked tapioca and salt.

Make the pudding

  1. Beat the egg yolks with the sugar.

  2. When the tapioca is hot, stir in the yolks constantly and cook for 2 minutes.

  3. Transfer the mixture to a bowl.

  4. Fold in the beaten egg whites gently.

Flavor and serve

  1. Place 1 teaspoon of strawberry jam in small glasses.

  2. When the tapioca is cold, stir in the jam to flavor.

  3. Fill the glasses with the tapioca mixture.

  4. Serve very cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body after soaking.
Eggs
Enrich the custard and, as whites folded in, add lightness and structure to the pudding.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Sugar
Sweetens the pudding and helps balance the eggs' richness.
Strawberry jam
Adds fruity sweetness and flavor when stirred into the cooled pudding.

The step that matters

Stirring the yolks into the hot tapioca. Adding yolks to very hot mixture while stirring constantly keeps them from scrambling. Cooking them gently for 2 minutes thickens the custard evenly and makes it safe to eat.

Swap the strawberry jam

How well each one fits the dish's main ingredients (milk, egg, vanilla, sugar):

  1. Figfits better
  2. Peachfits better
  3. Blueberryfits better
  4. Strawberry jamthe original

Fit is the average pairing score against milk, egg, vanilla, sugar. Candidates are from the same food group and used in at least 100 recipes.
