Braised Beef

Why it works: Onion and beef are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Braised Beef

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Dredge the beef with salt, pepper, and flour.

  2. Brown the beef on all sides in the drippings.

Braise

  1. In a skillet, fry the chopped onion in the drippings until yellow, then remove it.

  2. Place the beef in a deep baking pan with the onion and boiling water.

  3. Tie the herbs in cheesecloth and add to the water.

  4. Cover and steam in a 350°F (175°C) oven for four hours, basting every 20 minutes and adding more water as needed.

  5. Once the meat is tender, remove it and the herb bag.

Make the sauce and serve

  1. In a saucepan, cook the flour in the butter until brown, then gradually add the cooking liquid and season with salt and pepper.

  2. Optionally, add mushrooms, tomato, chopped celery, or any leftover cooked vegetables to the sauce.

  3. Pour the sauce over the meat and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Long gentle steaming turns the tough lower round cut tender and moist.
Flour
Dredging helps brown the meat, and cooked in butter it thickens the sauce.
Drippings
Fat used for browning the beef and softening the onion, adding savory flavor.
Onion
Softens and sweetens as it cooks, adding aromatic flavor to the braising liquid.
Butter
Fat that cooks with the flour to form a roux for the sauce.

The step that matters

Browning the beef. Searing the floured meat on all sides creates browned, savory flavors through the Maillard reaction. Crowding the pan or skipping this browning leaves the braise tasting flat.
