Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Grate the cheese and heat it with the cream or milk.

  2. Prepare the toast.

Make the rarebit

  1. Mix the salt, cayenne, and mustard, then add the well-beaten egg and beat well.

  2. Once the cheese is melted, add the egg mixture and butter, cooking over hot water until thickened, stirring constantly.

  3. Do not cook for more than 2 minutes to avoid curdling.

Serve

  1. Pour the mixture over the toast and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream cheese
Melts into a smooth, rich base for the sauce.
Egg
Thickens the sauce as its proteins set during gentle heating.
Cream or milk
Loosens the melted cheese so the sauce stays smooth and pourable.
Butter
Adds richness and a silkier texture to the sauce.
Mustard
Adds a sharp flavour that balances the richness of the cheese.

The step that matters

Cook the egg mixture gently and briefly. Egg proteins set when heated, so over-cooking or too much heat makes the sauce grainy or curdled. Stirring constantly over hot water, and stopping once thickened, keeps it smooth.
