Ingredients

Directions

Soak the tapioca

  1. Soak the tapioca in cold water for 4 to 5 hours, enough to cover.

Make the pudding

  1. Drain any excess water and place the tapioca in a double boiler with the milk.

  2. Cook while stirring continuously until the mixture is clear.

  3. Beat the egg yolks with the sugar and salt, then add to the tapioca mixture.

  4. Boil for one minute, stirring constantly.

  5. Remove from heat, beat the egg whites until stiff, and fold them into the mixture.

  6. Add the vanilla and pour into small glasses to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks and turns the mixture clear and gel-like.
Eggs
Egg yolks thicken the custard, and whipped whites add lightness to the finished pudding.
Milk
Forms the liquid base that the tapioca swells in and sets into a creamy texture.
Granulated sugar
Adds sweetness and contributes to the pudding's smooth, soft texture.

The step that matters

Boil for one minute, stirring constantly. Egg yolks begin to thicken around boiling and can scramble if overheated or left unstirred. Constant stirring spreads heat evenly and keeps the custard smooth while the tapioca sets.
