Beef's Heart, Stuffed

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the heart

  1. Trim and clean the beef heart, then sprinkle coarse sea salt over it.

  2. Let it stand for 2-3 hours, changing the water 2-3 times to draw out the blood.

  3. Wipe the heart dry and fill it with a dressing made of bread crumbs, pepper, salt, and finely chopped onion.

  4. Add enough butter to the mixture to make the crumbs stick together.

Bake and serve

  1. Place the stuffed heart in a 350°F (175°C) oven and bake for 15 minutes per pound.

  2. For better flavor, roast it before the fire if possible.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef heart
Dense muscle meat that becomes tender and sliceable when cooked slowly with moisture.
Bread crumbs
Absorb juices and butter in the stuffing, keeping the dressing moist and holding its shape.
Butter
Adds fat and richness, and binds the crumbs so they stick together.
Onion
Adds aroma and savory sweetness as it softens within the stuffing.

The step that matters

Soaking to draw out blood. Soaking and changing the water removes surface blood, which otherwise tastes strong and can make the meat look dark and unappealing after cooking.

Swap the onion

How well each one fits the dish's main ingredients (beef, bread, pepper, butter):

  1. Tomatofits about as well
  2. Potatofits about as well
  3. Capsicumfits about as well
