Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the rich meat and fat that flavour the stew as it simmers.
Mealy potatoes
Break down slightly during simmering, thickening the broth and softening the stew.
Onions
Soften and sweeten as they cook, adding body and savoury flavour to the broth.

The step that matters

Skimming after the boil. Skimming removes foam and loose fat that rise when the water first boils, keeping the broth clear and less greasy during the long gentle simmer.
