What each ingredient does

Mutton
Provides the meat that is re-cooked and served, carrying the main flavour of the dish.
Butter and flour
Rolled together, they thicken the gravy into a smooth, body-rich sauce.
Madeira wine
Added at the end, it adds a fortified, slightly sweet and aromatic note to the gravy.
Carrots, turnips, onions
Simmered in the cooking water, they release sweetness and savoury flavour into the gravy.

The step that matters

Skim fat from the gravy. Fat that is not removed before thickening makes the gravy greasy and can keep it from tasting clean. Skimming while the liquid is still hot lets the fat rise to the surface where it can be lifted away.

Swap the onion
