Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Gives the sauce its main flavour and, once softened and sieved, its body.
Egg yolks
Thicken the sauce as they gently set with heat, giving it a smooth, rich texture.
Thick cream
Adds fat and richness, making the sauce smoother and more velvety.
Milk
Provides the liquid base that the celery cooks in and becomes part of the sauce.

The step that matters

Stir over gentle heat. Egg yolks thicken by gently setting as they warm. High heat can scramble them into lumps, so keep the heat low and stir steadily until the sauce thickens.

Swap the celery

How well each one fits the dish's main ingredients (milk, egg, cream):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits about as well
  4. Celerythe original

Fit is the average pairing score against milk, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
