Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Cheese Souffle, or Fondtt
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the base
Grate the cheese and place it in an enamelled saucepan.
Add mustard flour, white pepper, Cayenne, grated nutmeg, butter, baked flour, and milk.
Stir over low heat until smooth and thick, but do not let it boil.
Remove from heat and mix in the beaten yolks of the eggs.
Bake and serve
Beat the mixture for 10 minutes, then fold in the stiffly beaten egg whites.
Pour the mixture into a tin or cardboard mold.
Bake in a 400°F (200°C) oven for 20 minutes.
Serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites trap air when beaten, lifting the soufflé as it bakes, and yolks enrich the base.
- Cheese
- Adds rich savoury flavour and fat, and its proteins help set the structure as it bakes.
- Butter
- Enriches the base and adds fat for a tender texture and rich flavour.
- Milk
- Forms the liquid base with the flour, thickening into a smooth sauce that holds the mixture together.
- Baked flour
- Thickens the base so it can hold the whipped egg whites without collapsing.
The step that matters
Folding in the egg whites. Whites must be stiffly beaten and folded in gently so the air bubbles are kept. Overmixing deflates the batter, and the soufflé will rise poorly.
Swap the white pepper
How well each one fits the dish's main ingredients (cheese, flour, mustard, pepper, nutmeg, butter, milk):
- Cinnamonfits better
- Cardamomfits better
- Thymefits better
- White pepperthe original
Fit is the average pairing score against cheese, flour, mustard, pepper, nutmeg, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
