Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the main character of the wine.
Sugar
Feeds the fermentation and provides sweetness and body in the finished wine.
Isinglass
Fining agent that helps clear the wine by settling out suspended particles.
Brandy
Adds alcohol strength and aroma to the finished wine.

The step that matters

Sealing the cask tightly. A loose seal lets air in and can spoil the wine or stop a clean ferment, so the cask must be sealed well before the long rest until bottling.
