Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or tongue
Provides the savoury meat base that gives the mince its body.
Suet
Adds fat that keeps the mixture moist and rich during storage.
Sugar
Adds sweetness and helps preserve the mixture.
Apples
Add moisture and tartness that balance the sweetness.
Raisins
Contribute chewy texture and concentrated sweetness.
Currants
Add small pockets of tart sweetness and chewy texture.

The step that matters

Cool the meat completely before chopping. Warm meat softens the suet, so the mixture turns greasy and is hard to chop finely. Cooling firms the fat, letting the meat chop cleanly and mix evenly with the fruit.

Swap the currant

How well each one fits the dish's main ingredients (beef, sugar, apple, raisin, nutmeg, cinnamon, allspice):
