Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; slow stewing turns it tender and lets it absorb the sauce.
All-purpose flour
Coats the chicken and thickens the sauce as it cooks with the liquid.
Curry powder
Supplies the spice blend that gives the dish its characteristic flavour and colour.
Onions
Soften and sweeten as they fry and stew, adding body to the sauce.
Butter
Carries flavour and browns the onions and chicken for richer taste.

The step that matters

Frying the onions until light brown. Browning builds sweetness and savoury flavour through the Maillard reaction. Cooking the onions too briefly leaves a raw, sharp taste in the finished stew.

Swap the onion

How well each one fits the dish's main ingredients (chicken, flour, butter):

  1. Leekfits better
  2. Potatofits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
