Roast Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Season the breast of veal with pepper and coarse sea salt.

  2. Skewer the breast firmly in place and dust the meat with flour.

Roast

  1. Roast the veal slowly in a 350°F (175°C) oven for about four hours, basting with butter.

Make the gravy

  1. When done, transfer the gravy to a stew-pan.

  2. Add the piece of butter rolled in browned flour to the gravy.

  3. If there isn't enough gravy, add a little water and season with pepper and salt to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Breast of veal
Is the main cut of meat, cooked slowly until tender over the long roast.
Flour
Dusted on the meat and browned flour thickens the gravy.
Butter
Basting adds fat and moisture to the surface and helps it brown.

The step that matters

Roasting slowly for about four hours. Long, low-temperature roasting lets the connective tissue in the veal break down gradually, so the meat becomes tender without drying out. Basting with butter keeps the surface moist and encourages even browning.
