Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Forms the main body of the dish, and slow frying browns its surface.
Tomatoes
Stewed down and strained, they supply the acidic, savoury base of the gravy.
Butter
Rolled in flour, it forms a roux that thickens the gravy and adds richness.
Flour
Combined with butter, it thickens the gravy so it coats the meat.

The step that matters

Stew the tomatoes until very dry. Cooking the tomatoes down until dry concentrates their flavour and reduces excess water, so the sauce stays thick rather than watery when strained and added to the gravy.

Swap the tomato

How well each one fits the dish's main ingredients (veal, pepper, butter, flour):

  1. Shallotfits better
  2. Leekfits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against veal, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
