Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for structure, while yolks add richness and set the crumb.
Flour
Forms the gluten network that gives the baked cake its body and structure.
Sugar
Sweetens the cake and helps hold moisture in the crumb.
Baking soda
Reacts with the batter's acid to release gas, helping the cake rise.

The step that matters

Fold in the beaten egg whites gently. Whipped egg whites hold the air that lifts the batter. Stirring vigorously knocks that air out, leaving a denser, flatter cake.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
  2. Vanillathe original
  3. Lemonfits less well
  4. Figfits less well

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
